Chickpea Curry with Mango

Via facebook, I got a request to share the recipe I used for the Chickpea Curry with Mango I made. Since it is a Dutch recipe, I have quickly translated the recipe should more people want the recipe 😀

Chickpea Curry with Mango
Chickpea Curry with Mango (VEGAN)

A delicious and quick Asian meal. The chickpeas are packed wih fibres and proteins so it will fill you up!

Ingredients:
– 250 gr whole-wheat couscous or brown rice
– 1 tbs oil
– 1 onion, chopped
– 3 tbs mild curry paste (Patak’s)
– 600 gr Asian stir-fry vegetables
– 1 large can chickpeas (drained weight: 500g) or 2 small cans
– 1 can chopped tomatoes
– 100 ml coconut milk
– 1 mango (nice and ripe)
– ½ tsp salt
– ½ tsp pepper
– handful of fresh coriander leaves

Method:
Prepare couscous or rice according to package directions.

In a large frying pan, heat the oil and sauté the onion in 2 minutes. Add the curry paste and stir. Add the vegetables, the chickpeas, the chopped tomatoes and the coconut milk and let it simmer for approximately 10 minutes. In the meantime, peel and chop the mango. Add the mango during the last 3 minutes.
Season the curry, serve with the couscous or the rice and garnish with the coriander leaves.

TIP: if you cannot find a ripe mango, you can also use mango chutney.
If you want a more coconut flavour, you can also add some grated coconut while cooking.
