Autumn Recipes

A new season means new seasonal produce hit the shelves in the stores. I really love cooking with food that is in season. My favourite autumn food is pumpkin. You can make sooooo many things with pumpkin:¬†pies, soup, cake, stew and the list goes on. Even though in some countries you can buy canned pumpkin year-round, there’s nothing better than fresh products. Another wonderful vegetable that you can buy this season is eggplant (or aubergine). You’ve guessed it, this “Inspiration Tuesday” is all about Autumn Recipes. I’ve also included a vegan option for every dish ūüôā So here are 10 dishes to make this autumn

1.¬†Alexandra’s Kitchen made a very¬†tasty¬†Eggplant involtini (on the left). As you may remember, I posted a vegan version of this recipe just last week (to read it, click here):

2. How Sweet Eats posted an Autumn salad. Just look at how beautiful it looks:

This recipe happens to be vegan-friendly!

3. Julia’s Album made a pumpkin chili. This recipe is also vegan-friendly. Want meat with it? Ground beef or lamb would go great with this recipe:

4. Waitrose posted the following recipe for roast vegetables (I just LOVE roast vegetables):

This recipe calls for halloumi cheese. Want to make vegan halloumi, try this recipe.

5. Last weekend I made this roasted Pumpkin soup by Rock Recipes:

This recipe is vegan. If, like my husband, you prefer meat with it, pan-fry some bacon strips and add them. The saltiness of the bacon takes this soup to a whole new level (also serve some pan-fried sage on top, that is just heaven!)

6. ¬†What about apples? During the fall there are also delicious apples available. Try these apple pie oatmeal cookies by Amy’s Healthy Baking:

To veganize this recipe, swap the egg for 1 tbs of ground flax seeds and 3 tbs of water.

7. Maybe you like asian food and want to try this Asian Noodle recipe by Iowa Girl Eats (on the left):

8. The Glowing Fridge made a Vegan Spicy Kale and Quinoa Salad. If you want fish with it, try salmon or tuna. It’s a great combo!

9. Bravo for Paleo added a super simple Brussel sprouts recipe to their website. Want to make it vegan? Use either more olive oil or vegan butter. Want meat with it? Try lamb cutlets or an oven-roasted spicy chicken leg. The possibilities are endless!

10. I’ve saved the best for last: Pumpkin Pie. Who doesn’t love pumpkin pie? Cook Local has a nice recipe WITH a recipe for the crust. I’ve made a vegan pumpkin pie a few years ago on World Vegan Day but I seem to have lost my recipe. I’ll try to find it and post it on my website as well. This is also a great vegan pumpkin pie.
