National Taco Day and World Animal Day

Not  only is it World Animal Day, it’s also National Taco Day (I swear it’s true! They even have their own website!) So today’s post is all about these two special days. I’m going to start of with National Taco Day. I decided to make my own tacos from scratch. This was the result:

Homemade Corn Taco FAIL

NAILED IT!!! Ok, so corn tacos were not a succes. I wanted to go to the store to buy tacos but then I became all dramatic and was like: ‘noooo, I can’t fail on the fourth day of my new adventure.’ My husband told me that if I made tacos, it would still be good for Taco Day. I disagreed because I always want to make everything from scrap and felt like a total failure. Just a second later, I was like: ‘F*ck it! I’ll make tortillas’. I know I can make those because I’ve done that before. Then I thought, it I “hang” them over a rack in the oven, I’ll get a taco shape (saw that on Pinterest once). Blimey, it worked:

Would you just look at that! My own tacos. They were not like the authentic (corn) tacos but they were sooooooo delicious. I made some ground chicken with homemade taco seasoning (recipe can be found here) and served it with sliced avocado, mixed salad and a salsa dip (I have to admit that this came from a jar 🙁 I’m sorry). Everybody (we were with three people, including myself) could just mix and match. My husband and friend were really satisfied but thought the chicken was a bit on the spicy side because they didn’t expect it to be spicy. My husband even said: “I enjoyed it very much”. My friend said: “I also like it very much”. I think I’m going to throw my tortillas in the oven more often. They got really nice and crunchy even though they were a little bit on the thick side. But, just like store bought tacos they were very crispy and impossible to eat, haha.

The other “special thing” today is ‘World Animal Day’.

The mission of World Animal Day is to

(1) celebrate animal life in all its forms,
(2) celebrate humankind’s relationship with the animal kingdom,
(3) acknowledge the diverse roles that animals play in our lives – from being our companions, supporting and helping us, to bringing a sense of wonder into our lives, and
(4) acknowledge and be thankful for the way in which animals enrich our lives.

More information on this can be found here. Since we have a cat, I decided to give him a little extra attention and some extra love (even though I never neglect my cat and even though he sometimes thinks everybody should feel sorry for him, he is not lacking anything). He really appreciated it:

In addition, his scratch pole was kind of destroyed and we don’t really have money for a new one. Because I thought he really needed one, I gave it a little makeover. I removed all of the rope and rewound it. Result: happy cat. I do have some pictures on my camera but I seem to have misplaced my camera (it happens!). As soon as I’ve found the pictures, I will upload them.
